Aaloo green chutney pulao




This is one awesome type of variety rice which i happened to taste in a restaurant and i immediately decided to try it at home. The flavor of the most popular of the green leaves namely coriander and mint makes this dish simply make you craving for more. Without the usual onion and tomato this dish is all the more unique and taste wise and health wise it is very best. 



Ingredients:


Raw rice : 2 cups (you can use basmati too)
Potatoes -  2, medium (peeled and chopped into cubes)

For grinding:

Mint - 1/4 cup
Coriander - 1 cup
Coconut - 2 tsp
Green chillies - 2
Garlic - 2
Ginger - 2 small pieces
Cumin seeds - 1/2 tsp
Water - as required to grind to a smooth paste

For seasoning :

Bay leaves - 2
Cloves - 3
Cardamon - 3
Cinnamon - 2

Ghee or Oil
Salt



Method:

Soak the rice for 20 to 30 minutes.  Then drain the water and keep it aside. Grind all the ingredients under 'For Grinding' section to a smooth paste. Take a pressure cooker. Add ghee, then goes all the seasoning items, saute for a few seconds before adding chopped potatoes. Saute for a minute or two. Then take the smoothly grinded green paste and mix well with the rest of the items in the cooker. Add the soaked rice now. Add sufficient water just enough to cover it. (we have already soaked the rice for a good 20 to 30 minutes so extra water need not be added). Add salt. Pressure cook for just one whistle.

This can be served with any raita of your choice.
