Yellow Pumpkin Cheese Cake - I would also label it as ice cream cake as it tastes like ice cream too. If you generally love egg less and bake free cakes you will definitely grab this one. Preparation wise it took me just 15 minutes and the refrigeration bit alone takes time..more than 3 hours. But something out of yellow pumpkin like a cake, for sure, will leave you surprised and feel tempted. So you need not imagine a delicacy out of yellow pumpkin any more you can make it and fill your palate too..!!!
Ingredients:
Yellow pumpkin puree - 11/4cup
Cream cheese - 108 gms or 6 cubic portions
Whipping cream - 200 ml
Dark brown sugar - 1/4 cup
White sugar - 1/4 cup
Cream Crackers - 7
Nutmeg powder - 1/4 tsp
Cinnamon powder - 1/4 tsp
Vennila essence - 1/2 tsp
Method:
Prepare pumpkin puree. Take large bowl add cream cheese, brown sugar and white sugar and whipping cream. Mix well until smooth.
Add the puree, along with nutmeg cinnamon powder and vennila essence. Again mix well.
Take the cream crackers and powder it and spread it evenly on a plate.
Refrigerate it for at least 3 - 4 hours. Then cut portions of it and serve.
